Specifications

Controls and Parts

Primary controls are the air vents and the adjustable grate height lever.

Air Vents: Bottom vent controls air intake (oxygen for fire). Top vent controls airflow and heat escape (chimney effect). Open vents for higher heat, close to lower temperature or extinguish coals.

Adjustable Grate: Use the lever on the side to raise or lower the cooking grate. Lower for searing, higher for slower cooking.

Thermometer: Reads approximate temperature inside the grill when lid is closed. Calibrate by boiling water test if needed.

Ash Drawer: Pull out to empty cooled ashes. Ensure drawer is fully closed before lighting grill.

First-Time Use & Seasoning

Before first cook, season the grill to protect interior surfaces and burn off manufacturing residues.

  1. Light a full chimney of charcoal and let it burn until covered with gray ash.
  2. Carefully pour hot coals into the charcoal grate. Spread evenly.
  3. With lid open, let the grill burn with all vents fully open for 30 minutes.
  4. Close the lid and let it heat for an additional 15-20 minutes.
  5. Allow the grill to cool completely. Lightly coat the cooking grate with cooking oil using a cloth or brush.

Tip: This process creates a protective layer and prevents rust.

Grilling Operation

Supports direct (high heat) and indirect (low & slow) cooking methods.

  1. Lighting: Use a chimney starter, electric starter, or fire starters. Never use liquid accelerants.
  2. Heat Management: Control temperature by adjusting top and bottom vents and the amount of charcoal.
  3. Direct Grilling: Spread coals evenly under food for searing steaks, burgers, etc.
  4. Indirect Grilling: Push coals to one side. Place food on opposite side with drip pan underneath. Ideal for roasting and smoking.
  5. Two-Zone Fire: Create a hot zone (pile of coals) and a cooler zone (few or no coals) for flexibility.
  6. Adding Charcoal: Add pre-lit coals from a chimney starter to maintain temperature. Avoid adding unlit charcoal directly.
  7. Extinguishing: Close all vents completely after cooking to suffocate the fire. Coals will be reusable if not fully burned.

WARNING! Coals remain hot for hours. Do not move grill until completely cold. Dispose of ashes in a metal container.

Cleaning & Maintenance

Clean after each use once grill is completely cool.

  1. Remove ashes from the drawer and charcoal grate. Dispose safely.
  2. Brush the cooking grate with a grill brush while still warm (after cooking).
  3. Wipe exterior surfaces with a damp cloth and mild soap if needed. Do not use abrasive cleaners.
  4. Check for rust periodically. Touch up with high-temperature paint if necessary.
  5. Lubricate the adjustable grate mechanism with cooking oil to prevent sticking.

CAUTION! Never use water to extinguish coals or clean a hot grill. Thermal shock can damage metal.

Storage & Winterization

For long-term storage or winter, protect your grill from the elements.

  1. Give the grill a thorough final cleaning.
  2. Ensure it is completely dry.
  3. Apply a light coat of cooking oil to the cooking grate and interior surfaces to prevent rust.
  4. Cover with a waterproof, fitted grill cover.
  5. Store in a dry, sheltered location if possible. If left outdoors, ensure cover is secure.

Tip: Remove the ash drawer and store it indoors to prevent moisture accumulation.
